A frittata is like the superhero of breakfast, brunch, or any time you’re feeling hungry. It’s packed with eggs and all sorts of goodies like veggies, meats, and cheeses, and you can mix and match to make it just how you like. Plus, it’s perfect for using up whatever you’ve got in the fridge, and you can eat it hot or cold. Whether you’re into the classic spinach and feta frittata or feeling brave with some spicy sausage and peppers, there’s no limit to what you can do with it.

This recipe was inspired by a yummy egg frittata we stumbled upon at Morning Fresh. Of course, we had to put our spin on it to match our tastes, and hopefully yours too! We tossed in some broccoli, green onions, Colby Jack cheese, and salsa. Plus, we scaled down the serving size to cater to one, but if you pair it with some toast and roasted potatoes, it can totally feed two.

Easy Egg Frittata

Ingredients

  • 2 eggs
  • 1/8 cup milk
  • 1/8 teaspoon dried thyme
  • 1/4 tsp salt
  • A pinch of freshly ground black pepper
  • 1/4 cup, cooked broccoli
  • 1/4 cup Colby Jack cheese
  • 1 1/2 tsp chopped green onion
  • 1 1/2 tsp chunky salsa, more to taste
  • 1 1/2 tsp extra-virgin olive oil or butter

Directions

1. In a medium bowl, beat together eggs, milk, salsa, thyme, green onion, and salt and pepper until well combined. Blend in the cheese and broccoli.

2. In an 8-inch skillet over medium heat, heat the oil. Add egg mixture once heated. Reduce heat to medium-low after two minutes and cook until eggs are almost done 8 to 10 minutes.

3. Turn off the heat on the skillet. Once the eggs are fully cooked and set, cover and leave for five to ten minutes to finish cooking.

4. Slice into wedges, taste and add salt and pepper to taste, then serve hot.
