Coleslaw with Creamy Dressing

Ingredients

  • 4 cups shredded cabbage, finely chopped
  • 1 cup shredded carrots, finely chopped
  • 1 small onion, finely chopped
  • 1/2 cup mayonnaise
  • 2 1/2 tablespoons sugar
  • 1/4 cup milk
  • 1/4 cup buttermilk***
  • 2 tablespoons lemon juice
  • 1 tablespoon white vinegar
  • 1/2 teaspoon salt, to taste
  • 1/4 teaspoon pepper, to taste

Directions

  1. In a large bowl, combine the cabbage, carrots, and chopped onions. Toss together until evenly mixed.
  2. In a separate bowl, whisk together the mayonnaise, sugar, milk, buttermilk, lemon juice, and white vinegar until smooth and creamy.
  3. Pour the dressing over the cabbage mixture and stir well to combine, ensuring all the vegetables are coated.
  4. Season with salt and pepper to taste.
  5. Cover the coleslaw and refrigerate for at least 30 minutes to 2 hours to let the flavors meld together.
  6. Serve chilled as a side dish with your favorite meal.

Tips & Substitutions:

Buttermilk Substitution

*** Buttermilk – If you don’t have buttermilk, add 1 tablespoon of white vinegar to a measuring cup and then add milk to equal 1 cup. Stir and allow to sit for 5 minutes.

TIPS

Shredded Cabbage
To save time, you can use packaged premade coleslaw mix; just remember to finely chop the ingredients.

Storage
Refrigerate the covered coleslaw for three days.
