Making short crust pastry simply requires a few staple ingredients, including flour, butter, and water, making it a fairly easy recipe to prepare. Because it doesn’t need to rise like some other pastry varieties, it’s an easy choice for bakers of all skill levels.

Making short crust pastry is easy. This slightly sweetened pastry is great for your next pie or fruit tart.

Yield: 2 Pastry Short Crusts | Difficulty: Easy

PREP TIME: 15-20 minutes +  CHILL TIME: 30 minutes to 1 hour  =  TOTAL TIME: 45 minutes to 1 hour and 20 minutes

Ingredients:

  • 3 cups of all-purpose flour
  • 14 tablespoons butter, cold and cut into small cubes
  • 1/2 cup (30g) powdered sugar
  • 2 pinches of salt or 1 teaspoon of salt
  • 2 large egg yolks or use 2 whole eggs
  • 4-6 tablespoons ice-cold water

Directions:

  1. In a large bowl, combine the all-purpose flour, powdered sugar, and salt.
  2. Add the cold butter cubes to the bowl. Using your fingertips or a pastry cutter, gently rub the butter into the flour mixture until it resembles breadcrumbs with some larger pea-sized pieces remaining.
  3. In a small bowl, whisk the egg yolks with 4 tablespoons of ice-cold water.
  4. Make a well in the center of the flour-butter mixture and pour in the egg yolk mixture. Using a fork, gradually bring the ingredients together until a dough starts to form. If needed, add another tablespoon of water, one teaspoon at a time, until the dough comes together.
  5. Turn the dough out onto a lightly floured surface and knead it just until it forms a smooth ball. Be careful not to overwork the dough.
  6. Divide the dough into two equal portions and shape each into a disc. Wrap each disc tightly in plastic wrap and refrigerate for at least 1 hour before using.
  7. Once chilled and ready to use, remove the dough from the refrigerator and let it sit at room temperature for a few minutes (about 5 to 10 minutes) to soften slightly.

Making a sweetened short crust is a delightful way to enhance your baked goods. Here are some tips to help you create a delicious sweetened short crust:

  1. Cold butter: Ensure that the butter is cold when making the dough. This is crucial for achieving a flaky and tender crust. Cut the butter into small cubes or grate it before incorporating it into the flour mixture.
  2. Mixing technique: Use a pastry cutter, fork, or your fingertips to work the cold butter into the flour until it resembles coarse crumbs. Avoid over-mixing to prevent the development of gluten, which could result in a tough crust.
  3. Sweetener: Add your desired amount of sweetener to the flour and butter mixture. Adjust the sweetness according to your taste preferences. Keep in mind that you can always add more sweetness through the filling, so don’t go overboard with the sugar in the crust.
  4. Liquid: Add a small amount of cold liquid, such as ice water or milk, to bring the dough together. Start with a tablespoon at a time and mix until the dough just comes together. Be careful not to add too much liquid, as it can make the crust tough.
  5. Chilling time: After you’ve formed the dough into a ball, flatten it slightly, wrap it in plastic wrap, and refrigerate for at least 30 minutes. Chilling allows the butter to firm up again, making it easier to roll out and maintain its shape during baking.
  6. Rolling and shaping: Once chilled, roll out the dough on a lightly floured surface to the desired thickness. For pies and tarts, transfer the rolled dough to the appropriate pan and press it gently into the corners. Trim any excess overhang and crimp the edges for a decorative finish.
