- Curdled Frosting: “If buttercream splits, warm a small portion for 10 seconds and beat it back in—it’ll come together beautifully.”
- No Buttermilk: “Stir one tablespoon of vinegar or lemon juice into a cup of milk and let it sit five minutes—instant substitute.”
- Cracked Cheesecake: “Cover cracks with a thin sour-cream layer sweetened with powdered sugar and vanilla, then top with fruit for a polished finish.”
- Out of Frosting: “Use fruit, ganache drizzle, or sprinkles. Perfection isn’t the goal—creativity is.”

Growth of The Cake Girl
The Cake Girl was launched from a food truck in Tampa nearly ten years ago. Kristina worked long hours and built a loyal customer base.
The brand now has a store, media attention, and a growing franchise program.
“We started with one truck, one oven, and a lot of faith,” Lavallee recalls. “There were nights we baked until sunrise, just hoping people would show up. Now, we have a team, a storefront, and a mission that’s about more than cake.”
Community Work
Random Acts of Sweetness
Lavallee leads a community initiative called Random Acts of Sweetness. Her team surprises local heroes, military members, and families with treats and thank you messages. She also serves as an Honorary Commander at MacDill Air Force Base and is recognized as a Patriotic Employer by the Department of Defense ESGR.
“It’s about making people smile,” she says. “Especially during the holidays, when a little kindness goes a long way.”
Background
She was born in Puerto Rico and is a graduate of the University of Central Florida Rosen College of Hospitality Management. She blends hospitality and entrepreneurship in every project.

Lavallee is creating new franchise opportunities and plans to grow in busy markets. She advises everyone to be flexible while baking and cherish important moments.
